Getting back into shape

Skittles had a pretty lazy day today. She was very sick right after leaving the feedlot while in quarantine. She has recently gotten over her illness, but is still exhibiting the occaisional cough. She is bright, alert and has healthy looking manure and a very healthy appetite!

However, she also seems to get winded pretty quickly. After lunging her for 20 minutes the first day she was here, she was puffing hard and pretty sweaty. I let her lunge at her own pace, never pushing her forward. She has no problem with moving out!

So, I plan to work her daily to get her stamina up. I can already see a difference in her - after lunging and riding for 20+ minutes today, she was just barely sweaty and not nearly as out of breath.

Does anyone have any tips on the best way to build stamina on a horse? How quickly should I increase her exercising time? Or should I do a couple of 20 minute exercise sessions each day?
